Do we chose B over C here because B attacks the conclusion more strongly? Thank you!

Well, (B) does effectively destroy the scientist's argument.
However, I'm having trouble seeing what effect (C) would have on the argument at all. What did you find attractive about it?

The increase in sunlight could be the reason for the increase in temperature, and not the buildup of gas.

Ah. I see what you're saying.
But I think you may not have read carefully enough. (C) doesn't say there's been an increase in sunlight. It just says that the amount of sunlight varies slightly from year to year. And a slight variation in solar intensity from year to year couldn't result in an increase in overall temperature.
In order to be effective in the manner you've described, (C) would need to say something like "Over the last century, Earth has received an increase in the amount of solar energy that reaches it."
The big takeaway is to make sure that you're not adding info (nor leaving any out) from the answer choices.
