Hey Dave - I want to make sure I am thinking about this one correctly.

Yeah, I think you've got it.
Just because self-interest makes government by consent impossible, that doesn't mean anything about the beliefs of these social theorists. They may not even know that such a relationship exists. So if we adjusted as you've suggested, then, yeah, we'd know that the social theorists do believe that gov by consent is impossible.
Of course, that only moves the problem back one step; after making your adjustment, we'd still have the question of whether the theorists know/believe that democracy is impossible without consent.
