For reasons of whateverness, if I get put on a waitlist for my top 3 schools I applied to, when would I know if I would be admitted (compared to when I would need to commit), and how could I keep all schools on the line until I get a yes/no response from all three.

Talk to them! It's never a bad thing to let schools know that you're interested in them, nor that other schools are interested in you (it's like a super-transactional dating service).
If you're waitlisted, you should pick up the phone and ask who you've gotta shiv to get off the waitlist (well, maybe not in those words). Once one school moves you off, let the other schools know that you'd like to really consider them, but you've got this offer from this other school...
Is that a game I can play with financial aid as well? Well this school is offering me blah blah blah, can you beat that?
Definitely. It's worked with several of my students in the past.
Obviously, it's not a confrontational negotiation, but a discussion that starts out "I really want to go to your school, but I'm quite concerned with affording it, and so I'm considering [other option X]..." is one worth having. It's not a lock to gain you anything (sometimes, the school just won't have the money to give), but it's an entirely appropriate conversation to tactfully pursue.
